As a franchise organisation without a sustainability manager, I Love Sushi wanted to embed sustainability into its business operations. But alongside daily operations, full agendas and growing requirements, turning that ambition into action was a challenge. What we see in practice is that many businesses face the same challenge: 77% of SMEs plan to make a sustainability investment this year, yet only 17% have a concrete short-term plan.
Our Work
One of our sustainability experts worked alongside the I Love Sushi team through our Sustainability as a Service approach. With this approach, a sustainability expert is periodically embedded within the organisation to create structure, identify priorities and support execution.
We worked with a holistic approach, looking beyond compliance and focusing on different parts of the business:
- Menu development and assortment choices
- Store appearance and customer-facing communication
- Fish supply chain and sourcing considerations
Result
As the strategy took shape, I Love Sushi was able to position itself as a frontrunner in the sushi sector. At the same time, the sustainability strategy played a meaningful role in successfully raising capital.
